Executive Chef

Executive Chef:

We are seeking an Executive Chef to join our team! You will thrive in a fast -paced environment and dedicate time to expanding our clientele base to establish the restaurant's brand and the Convention Center's multi-faceted venue's.

Responsibilities:

  • Oversee day-to-day culinary operations in both the restaurant and Convention Center
  • Coordinate food and kitchenware orders
  • Check freshness and quality of ingredients
  • Create & develop menu items
  • Excellent organizational skills, ability to navigate opportunities successfully
  • Standardize recipes and plate presentations for brand consistency
  • Work with management to create a memorable experience for guests
  • Oversee and lead the Culinary Department which includes the local 1 restaurant, Convention Center banquet facilities and other Food & Beverage outlets
  • Plan and oversee all aspects of production, including menu planning, purchasing, recipe adherence, customer requests and quality assurance
  • Selects and develops recipes based on type of food to be prepared
  • Supervises personnel engaged in preparing, cooking and serving meats, sauces, vegetables, soups and other foods
  • Assistance in the preparation of the annual budget and review monthly financial performance. Review, code, and approve invoices for the kitchen and submit to Accounting
  • Complete in -house financial tasks including food and supply inventories and computerized food management system tasks.
  • Responsible for the interviewing, hiring, training and scheduling of employees
  • Responsible for the management of all kitchen employees for both the Convention Center and restaurant side of the facility
  • Assess employee performance by giving annual performance reviews and approving raises for employees based on merit
  • Counsel employees through additional training and/or disciplinary actions up to and including termination
  • Review, revise and approve biweekly payroll reports and submit to HR
  • Ensure compliance with all health and safety regulations of the Health Department and OSHA
  • Ability to stay calm in a fast paced environment
  • Perform other related duties as necessary or assigned

Qualifications:

  • Three years' experience as a Sous Chef or Executive Chef in upscale dining, hotels/resorts, country clubs or senior living/healthcare
  • Excellent management and supervisory skills
  • Ability to handle tight time constraints and deliver an outstanding product
  • Ability to effectively communicate with internal and external parties
  • Computer skills including spreadsheets, emails, ordering and payroll management
  • Ability to stand throughout 8 - 10 hour shift, carry/move/ loads up to 50 pounds, move distances between hotel and convention Center, have 20/20 vision with/without corrective lenses, must be able to speak and understand fluent English
  • Must handle multiple tasks at one time prioritizing needs and directing staff effectively
  • Sanitation license or Food Handler Certified

Maintenance Enginerer

Maintenance Engineer:

We are seeking an Executive Chef to join our team! You will thrive in a fast -paced environment and dedicate time to expanding our clientele base to establish the restaurant's brand and the Convention Center's multi-faceted venue's.

Responsibilities:

  • Performs daily inspections and logs any deficiencies
  • Performs timely, quality repairs in guestrooms, meeting rooms, convention center and all public areas
  • Regularly inspect and repair the physical building's interior and exterior equipment, including, but not limited to mechanical and electrical equipment, hazards, systems, and general engineering operation
  • Competes work orders for repairs
  • Maintains an organized repair cart an tools to ensure a neat appearance and proper working order of all tools
  • Maintains a good appearance and a pleasant demeanor with all guests and staff alike
  • Hangs banners and signage as assigned
  • Handles electrical drops for the convention center exhibit space
  • Performs programming and maintenance functions on the facility's energy management system
  • Partners with hotel departments to handle guest requests
  • Shovel's snow from the customer sidewalks and other walkways in the event of inclement weather
  • Other duties/responsibilities as assigned, duties can change with or without notice

Qualifications:

  • High school diploma, GED, or equivalent work experience
  • At least 2 years of experience performing general repairs
  • Must be proficient with various computer controlled systems.
  • Responsible for performing regularly scheduled operational inspections of the physical facility and facility systems and for making any needed repairs and/or improvements to restore the facility to its original “perfect working order” condition.
  • Must have thorough working knowledge of basic tools, plumbing, and electrical repairs
  • Must be able to read, write, and speak fluent English
  • Must be able to understand follow written instructions
  • Must be able to carry 50 pounds up and down a ladder
  • Must be able to lift and carry at least 100 pounds
  • Must be able to climb 6 flights of stairs within a 45 second time period
  • Must have 20/20 vision either with or without corrective lenses
  • Work environment is both indoors & outdoors, various temperatures, various equipment, can work alone or with others

Regional Sales ManagerFull time position, The Opportunity: Harp Management WFSB, LLC is offering an exciting Regional Sales position in the unique adventure hospitality resort/lodging sector. We are looking for a seasoned talent with a dynamic personality & strong client centric characteristics. Our candidate must have a proven track record of success and be very confident regarding short and long term solicitation. Our Candidate will be joining a sales & marketing team that, for 40 years, has developed two of the most highly desirable, respected and legendary Alaska sport fishing destinations in the US market and voted "best of the best" worldwide. The Sales Manager (SM) will work at the direction of the Director of Sales and Marketing (DSM), to prospect for new business for Waterfall Resort and Steamboat Bay Fishing Club (two premier full service fishing resorts in Southeast Alaska). The SM will also be responsible for scheduling groups, and developing ongoing relationships with guests and group leaders. The SM will perform follow-up on new leads at the direction of the DSM. The SM will be based at home, and will spend a limited amount of time in Ketchikan Alaska, and on site at the resorts to further develop relationships with the groups they have booked, and all resort guests. The SM will work with the Digital Marketing Manager to develop, and work, high value follow-up lists from our client database. The SM will also help organize and attend trade shows and sales missions at the direction of the DSM. The SM will serve as a liaison between new business and the General Manager, and the DSM. This position reports directly to the DSM.

Culinary: Sous Chef
Full Time. Responsible for and supervises staff engaged in preparing, cooking, and serving meats, sauces, vegetables, soups and other foods. Train staff in accordance to hotel standard recipes in order to create quality food products. Ensure compliance with all health and safety regulations. Schedule staff to maintain proper coverage. Review and approve departmental hours for payroll, keeping costs in line. Ensure proper receiving, storage and rotation of food products. Place food orders, monitor weekly food costs and monthly inventory, adhere to and devise control procedures for cost and quality. Counsel employees through additional training and/or disciplinary actions, assess employee performance by giving annual performance reviews. Must possess fluency in English in all areas: reading, writing and oral communications, have comprehension of basic math skills, ability to make sound decisions while under time constraints.

Sanitation and Food Handler certified. Must be able to walk/stand for up to 8 hours or more, carry/move loads up to 50 pounds, ability to move distance between hotel and convention center. Culinary: Prep/Line CookFull Time/Part Time Culinary positions available, in both restaurant and banquet kitchens. Responsible for food preparation, execution and plating of food items. Ensure safe handling, cooking and storing of food. Responsible for overall cleanliness of the kitchens and equipment. Must work well independently, following daily prep list established by the Executive Chef. Execute fast & efficient service of all menu items, making sure cooking methods are executed properly, preparing food according to standardized recipes.

Banquet CookFull time position, minimum 2 years in a high volume banquet kitchen. Responsible for the large volume preparation, execution and plating of soups, sauces, proteins, vegetables and other food items in the Convention Center kitchens. Ensures the safe handling, cooking and storing of food. Responsible for the overall cleanliness of the kitchens and equipment. Must work well independently, follow daily prep list established by the Executive Chef. Ensures all prep is covered, labeled, dated and properly stored at all times. Executes fast, clean and efficient service of all menu items, makes sure cooking methods are executed properly, prepares food according to standardized recipes, responsible for the prep, cooking and plating of all menu items. Ensures and monitors food product quality, appearance and freshness at all times. Executes proper cooking temperatures, holding temperatures and sanitation practices to ensure safe food handling. Completes tasks in a timely manner to ensure time management and efficiency, keeps work areas clean and sanitized at all times, safely operates all kitchen equipment, ensures all prep is ready for the following day, ensures deliveries are properly stored and goods properly rotated. Always ensures all equipment and work stations are organized, cleaned and sanitized during shift and at closing.

Security OfficerPart Time, various shifts, evening/overnight shifts available. Previous security experience preferred. Must be able to stand/walk for 8-10 hour shift, work closely with all departments & outlets maintaining security of building and guests. Must be comfortable engaging with guests that might be upset/noise complaints/ID checks.
Banquet Set-Up House AttendantFull Time and Part Time available, morning/evening shifts available. Previous meeting and event set-up experience preferred. Excellent customer service skills, ability to multi task, read/understand room set-up, be detail oriented, self-directed and work well under pressure.
Housekeeping Room AttendantsFull Time, Part Time available. Previous experience a plus but will train. Must have excellent customer service skills, be detail oriented, work in a fast paced environment, & understand brand standards in regards to a clean, inviting, restful guestroom.
Housekeeping: Various Positions

Part Time, Full Time available. 1 year related service experience preferred. Must understand great guest service, be detail oriented and be able to work in a fast paced environment.
Front Desk Agent/Night Audit Full Time/Part Time, all 3 shifts available. Previous customer service experience in hospitality or related field preferred. Must enjoy engaging with guests and fellow co-workers alike. Position requires multi-tasking under pressure, solving and communicating issues and follow through for guest recovery. Must be guest-centric always providing outstanding service, empathy, and great energy for a positive guest experience.
Restaurant Server/BartenderFull Time/Part Time, various shifts available, morning and evening. Previous restaurant experience preferred. Exciting opportunity to join the team servicing a brand new concept restaurant that is opening within the Hotel. Applicants must possess excellent customer service skills, have the ability to multi-task, and work well under pressure.
DishwasherPart Time, morning/evening shifts available. Previous experience preferred. Must work well with the kitchen team, be self-directed and work well under pressure. Illinois State Food Handler Certificate, ServSafe Food Handler Certificate or Illinois State Food Service Sanitation License required.
Restaurant BusserPart Time, morning/evening available. 1 year restaurant service experience preferred. Must possess excellent customer service skills, work well with others, understand sense of urgency and ability to work under pressure. Ability to multi-task , self-directed and detail oriented.
Banquet Server/Bartender1 year high volume, high quality service experience preferred. Must possess excellent customer service skills, ability to multi task, work well under pressure, and be customer-centric. Must be able to carry 35 lbs above the shoulder, stand walk for 8-10 hours per shift, professional appearance required. Illinois State Food Handler Certificate, ServSafe Food Handler Certificate or Illinois State Food Service Sanitation License required.
